Easy Sheet Pan Asparagus Omelet (video)

I love Asparagus and I could have meals with this veggie breakfast, lunch, and dinner. I couldn’t resist but sharing my very first meal recipe here with you. And it’s one of my favorite. It’s so easy to make.

This dish literally takes like 20 minutes to prepare and and about 20 minutes to bake in the oven. Even though the Asparagus is baked with eggs, it remains crispy amd juicy all at the same time. It’s so delicious and filling, and so fast to make.

Video:

What you will need (serves 2 – 3 people):

1 bunch asparagus trimmed and washed
5  large eggs (room temperature)
2 scallions trimmed amd washed
1 bunch of parsley (washed)/ salt and pepper/ olive oil

Optional Ingredients:

You may add minced garlic to this dish to enhance the taste of asparagus.

Cherry tomatoes cut in half to add color.

Milk to the eggs to make your omelet more filling.

You can also add dill herb to this dish. It adds that tingy unique taste to the dish.

You can add 10 eggs instead of 5, it will make this dish as a main course. It will keep you full for half a day.

Add parmesan cheese right before putting it in the oven.

Add paprika as a herb to add more color to the dish.

Instructions:

Preheat your oven to 425 F.
Prepare an oven baking sheet.
Drizzle olive oil on the bottom of the baking sheet. You can use foil cover, but you still need to drizzle that with oil.
Fill in enough water in a pan to cover asparagus.
Drizzle a little salt and simmer asparagus for about 2 to 3 minutes.
Then, remove boiled asparagus from the pan on your prepared baking sheet.
Drizzle with more olive oil on top of asparagus.
Add more salt and pepper to taste.
Dice parsley with scallions and set aside.
In an empty bowl beat 5 eggs and add your diced parsley with scallions to the egg mixture. Don’t forget to add salt and pepper to taste.
Once everything is mixed, add your egg mixture on top if asparagus.
Bake for about 15 to 20 minutes, or until the egg mixture is firm and ready. You can check that by inserting a fork in the middle of the baking sheet and if the fork comes out clean, then your meal is ready to serve.
Enjoy!

I hope you will enjoy this dish and make it in on repeat. Looking forward to share more of my favorite recipes here with you.

See you next time!
